I heard lots of good things about Casa Rios on Facebook. We decided to give it a go on a Saturday evening.
We arrived and were seated quickly. Unfortunately they were pretty busy - there were a few open tables (this is around 6:30PM) but the wait staff had their hands full.
This was the only reason I took one star away from Service. Our waitress didn’t get to us for around 15-20 minutes. After she took our drink order, things moved along well! Our friendly waitress (Natalie) brought us a nice size bowl of thin, crispy tortilla chops and a bowl of refried black bean dip and salsa.
The chips were great! Crunchy, fresh, nicely salted. The bean dip was also a nice touch. The salsa - perfect. Not too spicy, a little tangy - refreshing.
Natalie noticed we went through the salsa pretty quickly and brought us another!
Time for the main course. We ordered a Santa Fe Chicken Salad and Chile Poblano Campestre.
When the food arrived (fairly quickly) the salad arrived first. It was huge! A big bowl of fresh mixed greens, lots of black beans, corn and a mountain of crispy chips and chopped grilled chicken.
The Chile Campestre was just as impressive.
A large battered and lightly fried poblano pepper covered in a spicy, rich red sauce and a lot of diced grilled chicken. On the other half of this large plate, there was a generous portion of mexican fried rice and creamy refried beans.
Both dinner were excellent! The salad had so many great combinations of greens, corn, beans, sliced avocado, chips and chicken - it was one of the best salads we have had in a while.
The Chili Poblano Campestre was also delicious. The red sauce was quite spicy - but much of it was next to the chili - perfect for dipping. The chicken and spices along with the cheesy fried poblano was hard to stop eating.
Both portions were huge!
We wanted to save a little for dessert, but it was much too difficult to stop eating ;-)
Towards the end of dinner (we still had quite a bit left!) Natalie came over and apologized for the delay earlier.
She also brought over some take out boxes for our leftovers.
I couldn’t resist asking about the desserts, especially the Coconut Tres Leches.
We ended up ordering one to go!
By the time we got home, we decided to try a little of the Tres Leches. It was absolutely delicious. Lots of fresh strawberries surrounding a moist coconut white cake with a creamy light whipped topping - and coconut on top.
Wow. Don’t miss getting it if it is available!!!
Overall - the meal was top notch. We did have a wait a bit before being attended to - but it was well worth the wait!

Sorry this brings me no joy! Our 4th time there with big family. Ambience is nice food presentation nice! 3rd time in a row Burrito Mojado utterly cold! My chili Colorado was a bowl of hot sauce with literally 4 tiny pieces of beef in it..and a smear of beans and rice as if that costs too much to spare a little. every other Mexican restaurant in town can deliver a decent value…this is all show and no go.

Great and authentic Mexican food. Our party had an array of dishes making sure to have tacos with the handmade corn tortillas. Yummy mole, vegetarian or carnitas tacos. And make sure to have the house salad which is made with spinach and a fresh mixed greens, topped with olives, cheese and other good stuff!
Yummiest, make sure to stop by.
Services was thorough and attentive.

First time experience and it was delicious! Highly recommend for food flavors. Portion was small for pricing and it's LOUD however they do have a sign that warns you upon entering. A MUST TRY in Redding!

Great food, service and atmosphere. This place has become my favorite in Redding. Leo had great suggestions and was attentive and friendly! Dessert here is fantastic! You've got to try this restaurant!
